Healthy breakfast and lunch ideas

I love eating healthy. Not only do you feel great about what you're putting into your body, but it just makes you feel great in all aspects of your life. You're happier, have more energy, feel better on the inside and can just enjoy life without those food comas from junk food.

So here are two of my favourite meals to help inspire your healthy eating:

BREAKFAST

For breakfast I will typically have a yogurt bowl every morning. Here are the ingredients I will normally put into my yogurt bowl.


I have my favourite coconut Greek yogurt. Greek yogurt is a great alternative to regular yogurt and is very full of proteins. With it I always have fruit. I always just use any fruit we have in the house but always try to add blueberries, I have a slight addiction to them. Today I had frozen blueberries and pineapple. I usually try to incorporate some sort of carb, to get the energy I need for the day. Today I used oats, mixed with a little agave syrup. It adds a pinch of sweetness! And on top I like adding a peach favoured fish oil just for the added nutrients.



LUNCH

For lunch, I like to keep simple but filling. I myself don't have a huge stomach, so just a simple sandwich can fill me up for hours. So that is exactly what I made today.


So for my sandwich, I toasted two slices of gluten free flax bread. On top of the bread I put a little bit of vegan butter and pesto and then layered on my toppings. Being a vegetarian, it is important to make sure I get my protein in, so for that I used a veggie hamburger paddy. I put a slice of Havarti cheese on top and then a few slices of zucchini, spinach and lettuce and then I put the other slice on top.


It was a small sandwich, seeing as the only gluten free bread I can ever find is about half the size of a normal slice of bread but it filled me up and stopped any cravings.

A Forest Full Of Hope

The other day my boyfriend and I discovered our new favourite place while on an adventure for ghosts. You're probably thinking, why were you looking for ghosts? Well, let me start off with saying that we have a gorgeous forest behind our house and we are always exploring its many paths. Not only is it a great way to escape the thunderous reality of work and trying to find my true meaning in life but it is a great way to reconnect with the world and its nature.

But, several times during these adventures, we have come across a certain area that we both get dreadful gut feelings about. It's like the second we step foot in this area, my heart starts pounding and my stomach feels as though someone just punched it. It's awful. A feeling of dread and sadness anguishes us. So obviously our first instinct is that this part of the forest is haunted.

And so the other day we decided to ditch the fear and finally explore the creepiest of creepy paths that runs off of the "haunted" part of the forest. When we reached the bottom of the path, my heart skipped a beat and I felt like we were being watched intensely. I wanted to leave right then and go back home but I was growing tired of always being the fearful one. I decided this was going to be the day that I face my fears of the unknown and give the trail a shot. It didn't help that my boyfriend, whom is generally very composed in situations like this, letting me know that he too had very creepy feelings about going up the path.

It was just a straight path leading right to the top of a mountain, very rocky, with many fallen trees crossing the path. The feeling of being watched never went away and I was constantly watching my surroundings, half expecting to actually see someone. But luckily there was no one.

The trail went on for what seemed hours (but was probably only half an hour long) and every few feet we would walk past smaller trails leading off of the one we were on. But they looked sketchy and un-used. I didn't think they would lead anywhere friendly but held my cool as we walked past them.

 As we reached the top, we started getting glimpses of the surroundings of the mountain and the fear just vanished. It was like walking through a doorway between hell and heaven. It was sunnier and warmer, the air felt lighter to breath. That's when we ran for the top, or at least my weak lungs tried while my boyfriend was a mile ahead of me. I felt excited and knew I needed to reach the very top.

I don't even have words to explain what awaited us at the top! It was the most beautiful sight either one of us had ever seen. It was breath taking. It was like something was trying to get us up that trail, even if we felt it was evil. Something wanted us to reach this spot, to see this sight. At least that's what we chose to believe. Not everything is what it seems and sometimes we need to push past those fears and go for it.
